Young and young-at-heart Instagrammers have been hooked on the icecream sandwiches at Moustache and Ponsonby Central's The Dairy for a while, but the kid-friendly revival is now growing up.

Although fresh "cookies" are the preferred option locally, the international craze has seen icecream sandwiched between churros, brioches and croissants in the United States - with fried chicken and lobster (yes, lobster!) appearing inside.

The ones pictured above are from Devonport's Cheltenham Dairy. Owner Tam Macken uses chocolate digestive biscuits and Valentino's gelato in flavours like salted caramel, chocolate, hokey pokey and mint chocolate chip. A little slice of summer all winter long.
