Apple & Berry Loaf

Frozen berries must be one of the most useful foods to have on hand. They’re not only great for smoothies and as toppings for breakfast cereals but for baking and desserts. Here, they are combined with apples to make a light and delicious loaf. Sliced, with fresh ricotta on top, it is perfect for breakfast or any time of day.

Apple and Berry Loaf
Makes 1 loaf

Ingredients
140g butter
140g caster sugar
2 eggs
200g self-raising flour
1 tsp ground cinnamon
1 Tbsp milk
2 apples, peeled, cored and diced
1 cup frozen berries
Icing sugar to dust
Ricotta to serve

Method
1. Preheat oven to 180C. Line a 1-litre loaf tin with baking paper.

2. Cream the butter and sugar until light and fluffy. Add the eggs and beat to combine. Stir through the flour, cinnamon and milk.

3. Add the apple and berries, stirring gently without over-mixing. Pour into the loaf tin, smooth the top and bake for 45 minutes until a skewer comes out just clean. Cool before removing from the tin.

4. Dust with icing sugar and serve sliced with a dollop of ricotta.
