Chase Bickerton, Bombay Sapphire's gin cocktail expert, on how to make an Arancia Spritz

ARANCIA SPRITZ

Ingredients
20ml Bombay Sapphire
10ml Aperol
60ml pinot noir rosé
40ml soda water
Rosemary sprig

Chase recommends: Build in a large wine glass over ice

1. Always measure your ingredients! This ensures the cocktail is as delicious as it can be. If you don’t have a jigger use a shot glass which is 30ml.

2. Get good quality ice by using large ice moulds (which you can purchase from most homeware shops) or you can use a silicone muffin tray. By using large-format ice your drink will be more consistent due to less dilution as the ice won’t melt as quickly.

3. Pinot noir rosé has been used in this recipe due to its fruit-driven style and acidic structure. I make mine with the Wither Hills rosé as the Marlborough style gives a great balance to the drink.
