Fresh and light, this is the perfect entree. Definitely use a tender beef fillet for best results. Sliced super-thin and paired with a delicious garlic sauce, you will find it is a little addictive.

BEEF TATAKI RECIPE
Serves 2

200g beef fillet
2 Tbsp flavourless oil
2 cloves garlic, thinly sliced
2 Tbsp finely chopped chives

Garlic Ponzu Sauce
1 clove garlic, crushed
2 Tbsp olive oil
1 Tbsp soy sauce
1 Tbsp rice vinegar
1 tsp fish sauce
1 tsp finely grated ginger
Pinch of salt and pepper

1. Rub the beef with the 1 Tbsp oil. Heat a small frying pan to a high heat. Sear all sides of the beef for 30 seconds. Remove, season and cool completely. Refrigerate until needed.

2. Heat the remaining oil in the same pan, adding the garlic slices and cooking until crispy. This will happen quickly. Reserve.

3. To make the sauce, in a small jar combine the garlic, oil, soy, vinegar, fish sauce and ginger. Season with salt and pepper.

4. When ready to serve, using a sharp knife, slice the beef paper-thin and spread on to your serving plate. Drizzle over the dressing and garnish with chopped chives.
