Braised Peas and Lettuce Recipe

Serves 6

50g butter
1 onion, finely diced
550g fresh or frozen peas
6 lettuce leaves, sliced
70ml chicken stock
Sea salt and freshly ground black pepper
1 Tbsp caster sugar

1. In a heavy based saucepan, melt the butter over a low heat. Add the onion and cook for two minutes until soft. Add the peas, lettuce and chicken stock. Season to taste.

2. Cover the pan and simmer the vegetables gently for three minutes. Add sugar, replace the lid and simmer for another three minutes. Turn into a heated vegetable dish and serve immediately.
