Simple Fig, Bacon & Blue Cheese Bruschetta Bites

I used a delicious chewy sourdough stick for the bruschetta, because the dense texture is great for grilling and topping with an array of flavours.

FIG, BACON AND BLUE CHEESE BRUSCHETTA RECIPE
Makes 12

12 x 1cm slices French stick
Oil, to brush
2-3 cloves garlic, end sliced off
4 figs, sliced
150g blue cheese
3 slices bacon, cooked until crispy
Lemon, to squeeze

1. Firstly, make the bruschetta. Brush the bread with oil, then rub with the garlic to infuse the flavour. Cook on a grill pan or frying pan until toasted and golden.

2. Preheat an oven to 180C.

3. On the bruschetta place some fig slices, blue cheese and bacon, and warm in the oven for 5 minutes.

4. Season with salt and pepper then serve with a squeeze of lemon.
