Gnocchi Recipe with Wilted Greens

Making fresh gnocchi is so rewarding but buying a good quality packet version for this recipe is ok too. Simply toss it into a fresh mix of vegetables and blue cheese for a creamy hit.

GNOCCHI WITH WILTED GREENS
Serves 2

1 Tbsp olive oil
20g butter
2 spring onions, sliced
2 cloves garlic, crushed
2 rashes streaky bacon, chopped
½ red pepper, sliced thinly
1 cup green veges, sliced thin
2 cups shredded kale
¼ cup sage leaves shredded
100g crumbled blue cheese
200g store-bought gnocchi, cooked

1. Heat the oil and butter in a frying pan. Add the spring onions, garlic, bacon, red pepper, and green vegetables cooking for 3 or 4 minutes until softened.

2. Add the kale and sage leaves allowing to wilt for 2 minutes.

3. Toss through the blue cheese and gnocchi to heat through.

4. Serve hot with extra sage leaves to garnish.
