Hoisin Duck Breast Salad

Prep the salad ingredients ahead of time so that you can enjoy the company and the food on the night.
HOISIN DUCK BREAST SALAD RECIPE
Serves 2
Sauce
¼ cup hoisin sauce
1 Tbsp mirin
1 Tbsp honey
2 Tbsp soy sauce
2 Tbsp orange juice
2 Tbsp water
2 duck breasts
Salad
100g rice noodles, cooked
1 spring onion, chopped
¼ cucumber, sliced thinly
100g snap peas, blanched and sliced thinly
2 radishes, sliced thinly
1. To make the sauce, combine the hoisin, mirin, honey, soy, juice and water in a bowl.
2. Preheat an oven to 180C. Score the fat on the duck breast. Heat a frying pan to a medium heat. Cook the duck breast, skin down, for 5 minutes, turn and cook for 2 minutes. Brush with sauce then place in the oven for 8 minutes or done to your liking. Let it rest for 10 minutes.
3. For the salad, place the noodles, spring onion, cucumber, snap peas and radish in a bowl, combining well. Add half the sauce and toss through.
4. When ready to serve, plate the salad, slice the duck and serve on top. Drizzle with the remaining sauce.
