Overnight Orange & Chia Pudding

Another take on Bircher, chia makes a tasty breakfast pudding. Rich in fibre, these little pearls take five minutes to turn into a tasty breakfast and will last in the fridge for up to five days. Great for getting your mornings sorted in one bowl. It's also gluten, dairy and refined sugar-free, so it's perfect for pretty much everyone.

OVERNIGHT ORANGE & CHIA PUDDING RECIPE
Serves 4

Ingredients
½ cup chia seeds (black or white)
1 ½ cups soy or almond milk
1 Tbsp linseeds
1 Tbsp orange zest
¼ tsp vanilla essence
1 Tbsp maple syrup, honey or date puree
1 orange, segmented
To serve fresh or dried figs, sliced, sprinkle of linseeds

Method
1. Into a bowl place the chia seeds, milk, linseeds, zest, vanilla and maple syrup. Stir well, cover and place into the fridge overnight. Stir again before bed.

2. In the morning, give mixture a good stir and add orange segments, reserving a couple for the top.

3. Garnish with sliced figs and a sprinkling of linseeds.
