Recipe: Date and Soy Smoothie

Makes 2

• 1½ cup dates, fresh or dried, soaked for 10 minutes
• 2 small bananas
• 2 cups soy milk (or milk of your choice)
• 1 Tbsp peanut butter
• 1½ cup crushed ice
• 2 Tbsp chopped mint, plus extra for garnish

1. Place all the ingredients in a blender.

2. Blend until smooth and fluffy. Pour into your favourite glass.

3. Add a sprig of mint and enjoy.
