Recipe: Iced Honeydew Melon Soup

Try Angela Casley's soup recipe - no cooking required

Serves 4-6

• 1 honeydew melon, peeled and seeds removed
• 1 Tbsp grated fresh ginger
• ½ cup mint leaves
• 1 cup coconut water
• Zest and juice of ½ lime or lemon
• Salt and pepper to taste
• Extra mint to garnish
• Crushed ice

1. In a processor place the melon, ginger, mint, coconut water and lime. Whiz until smooth and fluffy. Chill in the fridge until needed.

2. Before serving, season with a little salt and pepper. Serve in individual bowls with extra mint and crushed ice.
