Makes 3 cups

• 2 pomegranates, seeds and juice removed
• 1 cup sugar
• ½ cup pomegranate molasses
• ½ cup water
• 1 tsp Dijon mustard
• Zest and juice of 1 orange
• 2 Tbsp red wine vinegar

1. Into a medium-sized pot place pomegranate seeds and juice. Add sugar, molasses, water, mustard, orange and vinegar. Bring to the boil and simmer for 10 minutes, until seeds are completely soft.

2. Pour through a fine strainer and discard pips. Pour into clean, sterilised bottles and seal.
