Recipe: Poor Man's Rice
Try Angela Casley's Fijian rice dish for a quick and cost friendly meal

POOR MAN'S RICE
Serves 4-6
• ¼ cup clarified butter
• 1 tsp mustard seeds
• 2 onions, sliced thinly
• 12 curry leaves
• 4 cups cooked long grain rice, cooled
• 2 handfuls spinach
• ½ cup toasted sliced almonds
• Salt and pepper to taste
1. Melt butter in a large frying pan over medium heat. Add mustard seeds and stir until they start to pop. Add onions and curry leaves, cooking slowly to soften and caramelise.
2. Add the rice and carefully stir through to heat. Add the spinach and nuts, season with salt and pepper, and serve.
